Hi Riema,

The MDSWRITEFIELD subroutine shoud be at:

/MITgcm/pkg/mdsio/mdsio_writefield.F

(you can browse this easily online too).  But to write out profiles at 
each time step i think it might be easier to use the diagnostics package 
- that's not documented so well online, but if you download the pdf 
version of the manual, it's in chapter 6.19.
