Mike, to add to Patrick's reply, a less trivial example lives under 
MITgcm_contrib/high_res_cube/input/data.exf*
where interpolation (and also rotation of vectors input quantities) 
occurs from a coarse-resolution lat/lon grid to a hi-resolution 
cubed-sphere configuration.  Output grid can be arbitrary and 
arbitrarily aligned.  Input grid must be lat/lon and must encompass the 
output grid: longitude is equally spaced and latitude can be unevenly 
spaced, hence the need to specify vector *_lat_inc as opposed to scalar 
*_lon_inc.
